This is one of the bread recipes my mom, sisters and I would make when I was growing up. Jinger kinda became the official bread baker in the family. We love our Bosch mixers, although I’m sure other mixers with dough hooks would work with this recipe too.
Makes 6 regular loaves or 20-24 mini loaves
Ingredients:
6 C warm/hot water
2/3 C olive oil (+ a little extra for the surface/handling dough)
2/3 C honey
2 T (rounded) dry instant or active yeast
2 T salt
17 C (or a little less) whole wheat flour (If grinding your own flour, grind 11 C wheat kernals)
Directions: Add warm water, olive oil, honey and yeast to mixer bowl. Let sit 5 minutes until the yeast starts to bubble a little. Add all of the salt and half of the flour to the other ingredients and mix/knead on medium-low setting while continuing to add flour one cup at a time until the dough pulls away from the wall of the mixer completely (you don’t want it too wet or too dry, but a bit stretchy). Let the mixer continue to knead the dough for 8 minutes on medium-low setting (speed 2 on the Bosch mixer). Pour dough out onto oiled surface and separate dough into 6 equal parts. Form into loaves by tucking dough edges under itself, then place into 6 regular bread pans. Cover pans with clean towel and let dough rise in pans in a warm place or warm oven for 20-25 min. Bake loaves at 350 degrees until golden brown on top for about 20-30 min, or until done (internal temp of 190). Let cool on rack. Slice and serve.

“T” stands for Tablespoon and “t” for teaspoon. 🙂
How long does a loaf of bread stay good for? I may have to cut this recipe in half! 🙂
How long does 1 loaf of the bread stay good for?
Depending on the moisture in your home (e.g. summertime is worse, than the dry winter weather), the bread will stay good for for a few days on the counter, but I usually pop it in the fridge after a couple days on the counter and then we eat it as toast or pizza bread since it’ll stay good over a week in the fridge!
