Butterscotch Brownies

These are my mom’s favorite brownies, and one of her favorite desserts! Our friends, the Querys, make these and they became one of our favorite sweet treats.

Makes one 9×13″ pan

2 cups sucanat (coconut sugar or brown sugar work too)

4 t. water (omit if using brown sugar)

1/2 cup light olive oil

2 eggs

2 t. vanilla

1 1/2 cups flour

2 t. baking powder

1 t. salt

Grease 9×13″ pan. Combine all ingredients in bowl and mix well. Bake at 350 degrees for about 20 min. (Do not over bake!) Let sit a few min before cutting and serving.

*Tip: cut brownies with plastic knife to keep them from sticking as you cut! Works with most all brownies!*

  2. I’m late to the party but this is a fantastic recipe. Thank you! The one change I made was using 4 tsp rum instead of the water. Rum and brown sugar complement each other so well. Thanks again for sharing!
