Keller Chicken Etti

My sister-in-law (Anna) and her family (the Kellers) made this recipe for us when they came for a visit many years ago. I think Anna also made it on one of the shows awhile back. It’s super delicious and easy when you’re looking for a recipe that’s easy to multiply for a crowd!

 

1 lb. spaghetti noodles, cooked

1 lb. Velveeta

1 can cream of chicken soup

1/2 cup milk

1 can diced tomatoes and green chilies

1 1/2-2 cups chicken (cooked, and diced or shredded)

 

Cook spaghetti noodles. In separate dish, heat Velveeta with cream of chicken, milk and tomatoes and green chilies until Velveeta is melted. Add chicken. Mix with cooked noodles. Enjoy!

 

Note: This is a very mild sauce. For more spice add another can of tomatoes and green chilies. Sometimes we add a little salsa verde and garlic. Our boys like it as is without the additions.

    1. For a Velveeta substitute: Let a block of cream cheese come to room temperature. Whisk it with the milk until smooth then stir in a couple big handfuls of extra sharp cheddar.
