Easy Pan Fried Bean & Cheese Burritos

Ok, so now that I’m married with our little family of four, we majorly downsize this recipe! lol  This recipe (downsized of course) is perfect for when you’ve got just a little bit of leftover beans and rice and some tortillas on hand! Makes for a quick dinner that most kiddos love! I substitute whatever beans I’ve got on hand (tonight it’s a mixture of black and pinto beans) for the cooked pinto beans. You can also use refried beans.

Serves 18

8 C. pinto beans (cooked)

1 pkg. Taco seasoning or burrito seasoning

2-4 C. cooked rice (optional, may need to add more taco seasoning if adding rice)

2 C. shredded cheddar cheese

30 tortilla shells (medium-large)

olive oil (for cooking)

Toppings (optional):

16 oz. sour cream

hot sauce

*homemade guacamole *

salsa

jalapeños

Mash or blend beans and rice together with cheese and taco seasoning. Heat small amount of olive oil in pan. Place open face tortilla with mixture spread on 1/2 of tortilla in pan. Cook till golden brown. Fold top over. Cut into triangles with pizza cutter to eat easier. Add desired toppings. Enjoy!

Yeah, pretty much. With all the rice and beans it’s not quite as cheesy as a typical quesadilla, so the filling is more like a burrito, but flat and cooked like a quesadilla I guess. 🙂 Growing up we called them quesadillas but my mom’s recipe said burrito, so whichever one you wanna call it is cool.

      1. Pan fried burrito!! Never thought to make them this way. Will be making these tomorrow! Thanks for sharing!

      2. I have some the same sort of meal..to me there’s not much of a difference in a burrito or quesadilla except it’s shape! So stop giving her a hard time already!

  1. We eat Vegan and have no kiddos at home anymore, they have all grown up to families of their own, but this is a yummy recipe if I cook it without the cheese. Thanks for the recipes

We are a small family of 3. But, my hubby doesn’t eat beans or rice. So, for my 9 years old daughter, Lacey Grace and myself, how would you suggest that I adjust the ingredients amounts so that there is little or none wasted? Thanks in advance!

  3. Just to let you know that’s a quesadilla not a burrito. Burritos are wrapped not folded in half like quesadillas. You lived in Latin America or went to a Mexican restaurant you should know this. It does sound good though
