Easy Chicken and Noodles

This quick recipe feeds a crowd. We usually ate it with homemade bread and a big salad and fruit for dessert.

Serves 18

8 cans cream of chicken condensed soup

10 T. Mexican chicken boullion

17 C. water

1 onion, chopped (or 1 T. onion powder)

4-5 bags egg noodles

chunks of chicken (cooked), optional

pepper to taste

Bring to a boil the soup, boullion, water and onion. Boil 5 min. Add noodles and chicken. Cook until noodles are ready. Add pepper to pot or at table.

  2. Instead of using cream of chicken soup I use a product called “Better than Bullion” Chicken base, it’s a bullion paste, I prefer it to bullion cubes, it has a richer taste IMO. Also a secret to a nice robust flavor in chicken broths for soups, homemade chicken noodles or dumplings is put in a teaspoon or two (or 3) depending on how much you are making, of Better than Bullion beef base. For a family of 4, 1 tsp is enough but if you are feeding 20+ I’d put in 3 or 4 tsps.

    1. Since trying Better Than Boullion I’ve never looked back. I use this product and it makes a wonderful base for soups. It is a must have in our pantry. I will give that helpful hint a try.

    Here is a healthier option. Veges, cabbage, carrots,, broccoli, and sweet potato. Prepare and put into a large saucepan. Add 1 large chopped chicken breast fillet, ground black pepper, some mixed herbs, minced garlic, and 1-2 teaspoons of a high quality stock powder. Add 2 litres water. Simmer for 20 minutes. Add fine cut pasta, and cook for a further 10 minutes. Sprinkle with cheese before serving. Yummy and healthy!
