Greek Pasta Salad

Greek Pasta Salad

This is a super easy and healthy recipe that tastes delicious! It’s great as leftovers too! We especially enjoyed throwing some fresh garden veggies into this dish this summer. Click here to see a recent video of Sam helping me collect some herbs from the garden to make this salad!

1 box (12.oz) bow tie pasta

1/3 C. olive oil (+ a little more for cooking with pasta)

salt (a pinch for cooking with pasta + a little more to taste)

1 bell pepper, seeded and diced

1 cucumber, peeled and diced

2 small/medium tomatoes, diced (or 1 C. cherry tomatoes, halved)

1/4-1/2 C. olives (any pitted kind works great)

1/4 C. feta cheese or parmesan

1/4 C. apple cider vinegar

1 t. thyme

1 t. basil

2 t. oregano

1 t. garlic powder

1 t. onion powder

1/2 t. pepper

Prepare pasta according to package, adding a little salt and oil to the water while cooking. Strain pasta. Add all ingredients to large bowl including cooked pasta. Stir and chill in fridge to blend flavors. Enjoy!

        Does it matter what color pepper? Is one sweeter than the other?

          I just use whatever I’ve got. Green are usually cheaper here so that’s what I use most.

          Red, orange and yellow are sweeter than green.
