Vanessa’s Beef and Cabbage

Several years ago, a friend of ours made this for us when we were in Tennessee visiting our friends the Bates (another mega family, lol). We liked it so much we had to get the recipe! We began making this recipe at home in large industrial pans to feed the whole family.

 

2 heads cabbage (green)

1 onion

1 C. water (more if you like it soupy)

2 cans Rotel (or stewed tomatoes for less spice)

1 8oz. can tomato sauce

2 pkgs. Beef Polish Sausage (cut bite size) or Lil Smokies

1 lb. ground beef, browned and drained

1 t. salt

1/2 t. pepper

1/2 t. pepper

1/2 t. creole (more or less)

1/8 t. cayenne

Mix everything together in a large pan. Cover with foil. Bake in oven at 350 degrees for 2 hours. Stir halfway through. Veggies should be soft with a little crunch.

Notes: Can be eaten as meal or served over rice or potatoes.
