Derick’s Favorite Vegetarian Chili
I came up with this recipe soon after we were married. I just started dumping things in the pot and wa-la! Derick loved it and ate almost the whole pot! LOL
2-3 (15 oz) cans beans (any kind you like)
2 (15 oz) cans diced tomatoes
2 (8oz) cans tomato sauce
1 (4oz) can green chilies
3 medium potatoes (washed and diced)
1 med/lg. onion (peeled and diced)
3 T chili powder
1.5 T ground cumin
1 T garlic powder
1 whole Anaheim pepper (optional, just for flavor while cooking)
salt and pepper to taste
Directions:
Sautee onion in skillet. Dump onion and all ingredients (except potatoes!) into 5 quart pot and bring to simmer. In skillet, cook potatoes with a little water. Add potatoes to rest of ingredients and continue simmering till flavors blend (30ish min?). Serve “as is” or with whatever chili toppings you like!

If y’all don’t have that type pepper there are lots of others that could add a yummy flavor. I just threw in what I had. I’m sure it would taste fine without it or with bell peppers or jalapeños if you like spicy!
I make a version of this all the time, with carrots, red peppers, and chipotles. We can’t eat it any other way niw. Good job. Keep ’em coming.
I can’t wait to try this!! I’m a vegetarian and have yet to find a good chili! But this one sounds great! Have you tried it with sweet potatoes? I’m thinking that would be a good twist
I’m sure you could. Sweet potatoes are good in just about everything. 🙂
Could I make this in a crock pot?
Probably so! If you do, just make sure your meat gets cooked all the way or that you cook it before you put it in the slow cooker. Let me know how it goes if you decide to do it that way!
Do you make your own baby food or do you buy it?
Sometimes I make it and sometimes I buy it…just depends.
What beans do you use? How long do you cook the potatoes by themselves?
I’d just use whatever I have…an assortment can be nice too. Black beans, red beans, whatever you’d like. On the potatoes, about 20-25 min. It depends on how big you’ve diced them.
This is great! Pretty much like my vegetarian chili recipe, which I make with quinoa. The quinoa gives off a similar texture to meat, so I call it I Can’t Believe It’s Vegetarian! Anyway, blessings on your folks. Keep on seeking God.
